  1. In a large bowl, combine the ricotta cheese, drained chopped spinach, and 1/2 cup of freshly grated Parmesan.
  2. Season the ricotta mixture with salt and pepper to taste.
  3. Add the eggs to the ricotta mixture and mix well until combined. Set aside.
  4. Heat olive oil in a large skillet over medium heat. Add the chopped pancetta and cook until crisp, about 5 minutes.
  5. Add the sliced mushrooms and minced rosemary to the skillet. Cook, stirring frequently, until the mushrooms are tender and juices have evaporated, about 12 minutes.

  13. Spread the remaining ricotta filling over the noodles.
  14. Spoon the remaining 1 cup of sauce over the ricotta.
  15. Sprinkle with the remaining 1 cup of Fontina cheese and the remaining 1/4 cup of Parmesan cheese.
  16. Cover the dish with foil and bake for 25 minutes.
  17. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the top is lightly golden.
