Description

These French Fantan Rolls are the epitome of comfort baking, offering a rich, tender crumb with a golden, buttery crust. Enriched with eggs, milk, and a generous amount of butter, these rolls possess a soft, silky texture that is far superior to standard yeast breads. The subtle hint of butter extract enhances the savory richness, while a touch of sugar ensures a perfect golden bake. They are incredibly versatile, serving as an elegant side for holiday dinners, a hearty addition to brunch spreads, or simply paired with a warm cup of coffee.

Directions

  1. Combine scalded milk, softened butter, sugar, and salt in a small saucepan.
  2. Stir over low heat until the butter melts and mixture is smooth.
  3. Cool the milk mixture to 105-115°F (40-46°C), using a thermometer to verify.
  4. Dissolve active dry yeast in 1/4 cup warm water (105-115°F) in a large mixing bowl. Let stand for 5-10 minutes until foamy.
  5. Stir the cooled milk mixture, beaten eggs, butter extract, and lemon extract (if using) into the yeast mixture.
  6. Gradually stir in flour, starting with 5 1/2 cups, until a soft dough forms.
  7. Add more flour as needed until the dough is no longer sticky but remains soft and silky.
  8. Turn dough out onto a lightly floured surface.
  9. Knead dough by hand or with a mixer until smooth and elastic, about 5 minutes.
  10. Place dough into a large greased bowl, turning once to coat the top with oil.
  11. Cover and let rise in a warm place until doubled in bulk, about 1 hour.
  12. Punch down dough to release air bubbles.
  13. Divide dough into 24 equal pieces, about the size of small lemons.
  14. Roll each piece into a smooth ball or shape as desired.
  15. Place shaped rolls on greased baking sheets, spaced apart.
  16. Cover and let rise again for 30-45 minutes until puffy.
  17. Preheat oven to 375°F (190°C).
  18. Bake rolls for 15-20 minutes, or until golden brown and cooked through.
  19. Remove from oven and brush immediately with melted butter.
  20. Cool on wire racks before serving.
