Description

This traditional French-style ice cream is the epitome of decadence, featuring a rich custard base made with egg yolks and heavy cream. Unlike American-style frozen dairy desserts, this version relies on a cooked custard to create an exceptionally smooth, dense, and creamy texture that melts slowly on the tongue. The primary flavor is pure, high-quality vanilla, which serves as a perfect canvas for various mix-ins. It is an elegant dessert suitable for special occasions, dinner parties, or as a sophisticated treat for a quiet evening at home. While it requires a bit more attention than simple no-churn recipes, the result is a luxurious, old-fashioned favorite that showcases the true quality of your ingredients.

Directions

  1. In a small bowl, beat the egg yolks until they are light and foamy.
  2. Gradually add 3/4 cup of the sugar to the yolks, beating continuously until the mixture is thickened and pale.
  3. Carefully fold the egg yolk and sugar mixture into the beaten egg whites (if using whole eggs as per original "separated" note, though recipe only lists yolks in steps, traditionally French ice cream uses yolks for custard; if whites are intended for volume, beat whites until soft peaks form and fold into yolk mixture).
  4. Gently stir in the cream and the remaining 3/4 cup of sugar.
  5. Transfer the mixture to a 3-quart saucepan.
  6. Cook over medium heat, stirring constantly with a wooden spoon or heatproof spatula.
  7. Continue cooking until the mixture thickens enough to coat the back of a spoon. Do not let it boil, as this will curdle the eggs.
  8. Remove from heat and allow the mixture to cool completely to room temperature.
  9. Once cooled, stir in the vanilla extract.
  10. Chill the mixture thoroughly in the refrigerator until very cold.
  11. Churn the ice cream base in an ice cream maker according to manufacturer's instructions.
  12. Transfer the churned ice cream to a freezer-safe container and freeze until firm.

Note

Store in an airtight container in the freezer for up to 2 weeks. For best texture, let sit at room temperature for 5-10 minutes before scooping.

For flavored variations, reduce the vanilla to 1 tablespoon. Add mix-ins after the base is cooled but before chilling/churning, unless noted otherwise.

Add 2 cups of finely chopped black walnuts to the base before churning.

Blend 1/4 cup instant coffee into a portion of the cream and heat to dissolve. Cool completely, then stir 1 cup miniature chocolate chips into the base before churning.

Blend in 2 cups canned pumpkin, 1-1/2 tsp pumpkin pie spice, and 1/2 tsp allspice into the cooled base.

Combine 4 tsp cinnamon, 1-1/2 tsp nutmeg, and 1/2 tsp ground cloves with the sugar in the recipe.

Reduce sugar to 3/4 cup. Blend in 1 cup crushed peppermint stick candy into the base. Add another 1/2 cup crushed candy after freezing but before ripening.

Reduce sugar to 1-1/4 cups. Blend in 1 cup crushed plain toffee candy. Add another 1 cup crushed candy after freezing but before ripening.

Ensure the custard reaches at least 170°F (77°C) during cooking to safely pasteurize the eggs, but avoid boiling to prevent curdling.
