Ingredients

Directions

  1. Trim excess fat from the beef roast.
  2. Rub the beef all over with flour.
  3. Heat oil in a large skillet or electric slow cooker and brown the beef on all sides.
  4. Place the browned meat into the slow cooker.
  5. Pour the condensed onion soup mixture over the meat.
  6. Cover the cooker and cook on low for 10 hours or on high for 5 hours, until the meat is tender when pierced with a fork.
  7. During the last 10 minutes of cooking, place sliced green pepper rings on top of the roast to steam.
  8. Remove the meat and pepper rings to a heated serving platter and keep warm.
  9. Turn the slow cooker heat to high.
  10. In a small cup, combine 1/4 cup flour and 1/2 cup cold water to make a smooth slurry.
  11. Stir the slurry into the juices in the slow cooker.
  12. Cover and cook for 15 minutes, or until the gravy has thickened.
  13. Taste the gravy and season with salt and pepper if needed.

Note

For best results, use a chuck roast as it has more marbling and stays juicier than round.

If the gravy is too thin, you can add a little more flour slurry. If it is too thick, add a splash of beef broth or water.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.

Serve with mashed potatoes, egg noodles, or crusty bread to soak up the flavorful gravy.

Ensure the green peppers are added at the end so they remain crisp-tender and do not become mushy during the long cooking process.
