This homemade ice cream captures the essence of summer with real Georgia peaches suspended in a rich, egg-based custard. The peaches are first macerated with sugar and lemon juice to draw out their natural juices and intensify their flavor, ensuring every scoop is bursting with fruity sweetness. The base is silky and smooth, balancing the tartness of the lemon with the richness of heavy cream and milk. It&# 226;€™s a nostalgic treat that feels luxurious yet approachable, perfect for a warm evening dessert or a special celebration. Unlike store-bought versions, this recipe offers a superior texture and authentic fruit flavor that melts on the tongue. Serve it scooped into bowls or cones, garnished with a few extra peach slices for a beautiful presentation.

Ingredients

Directions

  1. Combine the finely chopped peaches, 1/2 cup of the sugar, and the lemon juice in a bowl.
  2. Cover the bowl and refrigerate for 2 hours, stirring the mixture every 30 minutes to macerate the peaches.
  3. Remove the peaches from the refrigerator and drain the released peach juice into a separate bowl.
  4. Reserve the drained peaches in the refrigerator until needed.
  5. In a mixing bowl, whisk the eggs until they are light and fluffy, about 1-2 minutes.
  6. Gradually whisk in the remaining 3/4 cup of sugar, adding it a little at a time, then continue whisking until completely blended, about 1 minute more.
  7. Pour in the heavy cream and milk, whisking continuously to blend into a smooth custard base.
  8. Stir the reserved peach juice into the cream mixture and blend well.
  9. Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions.
  10. When the ice cream has stiffened but is not yet fully frozen (about 2 minutes before it is done), add the reserved peach chunks.
  11. Continue freezing until the ice cream reaches your desired consistency.
