Ingredients

Directions

  1. Bring a large pot of water to a boil for blanching the tomatoes.
  2. Drop tomatoes into the boiling water briefly to scald, then drain and remove their skins.
  3. Finely chop the peeled tomatoes and transfer them to a large colander.
  4. Wearing rubber gloves, trim the tops off the hot peppers and chop them coarsely.
  5. Add the chopped peppers to the tomatoes in the colander.
  6. Finely chop the onions and tomatillos, then add them to the tomato and pepper mixture.
  7. Stir in the salt and allow the mixture to sit and drain for 2-3 hours to release excess liquid.
  8. After draining, give the mixture a few good stirs, then add the olive oil, vinegar, minced garlic, and fresh herbs.
  9. Transfer the combined ingredients to a large pot and cook over medium heat until it bubbles gently.
  10. Simmer for approximately 30-45 minutes, stirring occasionally, until the salsa reaches your desired consistency.
  11. Ladle the hot salsa into sterilized jars, leaving appropriate headspace, and process in a water bath canner for preservation.

Note

For canning safety, ensure jars and lids are properly sterilized and follow recommended water bath processing times for your altitude.

Adjust the type and quantity of hot peppers to control the heat level. Serrano and cayenne provide more heat, while Hungarian wax peppers are milder.

If not canning, this salsa can be stored in the refrigerator for up to 1-2 weeks in an airtight container.

Always wear gloves when handling hot peppers to avoid skin irritation and accidental eye contact.

Tomatillos should be rinsed thoroughly to remove the sticky husk residue before chopping.
