Description

This comforting dish transforms fresh, ripe tomatoes into a warm, savory meal using the convenience of a microwave. The tomatoes are gently heated and seasoned with white wine vinegar and Worcestershire sauce, highlighting their natural sweetness. A crunchy topping made from butter, breadcrumbs, Parmesan cheese, and toasted pecans adds texture and richness, contrasting beautifully with the soft tomato slices. It is an ideal side dish or light vegetarian main for a quick weeknight dinner. Simple to assemble and cook in minutes, it brings a touch of Italian-inspired flavor to the table without the fuss of oven baking.

Ingredients

Directions

  1. Melt the butter or margarine in a microwave-safe bowl or small glass measure. Microwave on high for about 1 minute or until melted and hot.
  2. In a separate bowl, combine the melted butter, fine dry breadcrumbs, Parmesan cheese, and chopped toasted pecans. Mix well to coat the crumbs and nuts evenly.
  3. Peel the tomatoes if desired, then slice them into 1/2 inch thick rounds.
  4. Arrange the tomato slices in a single layer in a 9-inch microwave-safe pie plate or dish.
  5. Drizzle the white wine vinegar and dash of Worcestershire sauce evenly over the tomato slices.
  6. Cover the plate with wax paper or a microwave-safe lid. Microwave on high for 2 to 3 minutes, or until the tomatoes are heated through but not mushy. Give the plate a half-turn halfway through cooking.
  7. Remove the cover and sprinkle the breadcrumb and nut mixture evenly over the hot tomatoes.
  8. Microwave uncovered on high for 30 to 60 seconds, or until the topping is heated through and slightly crisp. Serve immediately.

Note

Adjust microwave times based on your oven's wattage; lower wattage ovens may require an additional 30-60 seconds for each cooking step.

Peeling the tomatoes is optional but recommended for a smoother texture. To peel, score an 'X' on the bottom, blanch in boiling water for 30 seconds, then plunge into ice water before peeling.

For added color and flavor, sprinkle sliced green onions over the topping just before serving.

This dish is best served immediately while the topping is still crisp.
