Ingredients

Directions

  1. Trim fat from the beef steak and cut the beef into 3/4-inch cubes.
  2. Toss the beef cubes with 1 tablespoon of oil, cornstarch, salt, and white pepper in a bowl. Cover and refrigerate for 30 minutes.
  3. While the beef marinates, cut the hot green chilies into thin slices, removing seeds and membranes if you prefer less heat.
  4. Cut the green onions diagonally into 1-inch pieces. Cut the red bell pepper into 3/4-inch squares.
  5. Heat a 12-inch skillet or wok over high heat until very hot. Add 2 tablespoons of vegetable oil and rotate the skillet to coat the bottom.
  6. Add the marinated beef to the hot skillet. Stir-fry for 2 minutes, or until the beef is browned. Remove the beef from the skillet and set aside.
  7. Heat the skillet again until very hot. Add the remaining 2 tablespoons of vegetable oil and rotate to coat the bottom.
  8. Add the sliced chilies, finely chopped garlic, finely chopped ginger root, brown bean sauce, and diced canned bamboo shoots. Stir-fry for 1 minute.
  9. Return the beef to the skillet. Add the bell pepper squares and sugar. Stir-fry for 1 minute.
  10. Stir in the sliced green onions. Sprinkle with roasted peanuts and serve immediately.
