Description

This vibrant Vietnamese-style sauce is the perfect companion to crispy fried chicken or grilled meats. Made with a balance of distilled white vinegar, sugar, fish sauce, and black soy sauce, it delivers a complex flavor profile that is simultaneously sweet, sour, salty, and umami. The addition of toasted white sesame seeds adds a nutty aroma and pleasant texture. This versatile condiment is excellent for drizzling over rice, dipping spring rolls, or enhancing simple weeknight dinners. It comes together quickly in a small saucepan and keeps well in the refrigerator, making it a staple for home cooks who love bold, authentic flavors.

Ingredients

Directions

  1. Heat a small skillet or saucepan over medium heat.
  2. Add the white sesame seeds to the dry pan and toast for about 2 minutes, stirring frequently, until lightly golden and fragrant. Remove from heat and set aside.
  3. In a small saucepan, combine the distilled white vinegar and sugar.
  4. Place the saucepan over medium heat and bring to a simmer, stirring constantly until the sugar is completely dissolved.
  5. Reduce the heat to low and add the black soy sauce and fish sauce.
  6. Simmer gently for 5-7 minutes until the sauce thickens slightly and reduces by about one-quarter.
  7. Remove from heat and stir in the toasted sesame seeds.
  8. Allow the sauce to cool to room temperature before serving.

Note

Store any leftover sauce in an airtight jar in the refrigerator for up to 2 weeks.

For a milder flavor, reduce the amount of fish sauce by half.

If you prefer a sweeter sauce, increase the sugar by 1 tablespoon.

Black soy sauce adds a rich color and molasses-like flavor; if unavailable, you can substitute regular soy sauce, though the color will be lighter.

This sauce pairs well with steamed rice, fresh spring rolls, or grilled pork.
