Description

This hearty Southern-inspired dish combines creamy, stone-ground white grits with a rich, savory gravy loaded with smoked chorizo and plump shrimp. The dish delivers a comforting, protein-packed meal that balances the earthy texture of the grits with the spicy kick of the sausage and the sweetness of the seafood. It is an excellent choice for weeknight dinners when you want something satisfying yet relatively quick to prepare. The combination of heavy cream in the grits and a roux-based gravy creates a luxurious mouthfeel that feels indulgent without being overly complex.

Directions

  1. In a large pot, bring 12 cups of chicken broth to a boil.
  2. Slowly stir in the stone-ground grits, ensuring no lumps form.
  3. Reduce heat to low and simmer, stirring frequently, for 20-25 minutes until grits are tender.
  4. Stir in heavy cream and cook for another 10 minutes, stirring occasionally.
  5. Season grits with salt and pepper to taste, then keep warm.
  6. For the gravy, melt butter in a heavy saucepan over low heat.
  7. Add sliced tasso ham and brown for 1 minute.
  8. Add flour and stir constantly to make a roux, cooking until nutty and light brown.
  9. Turn heat to medium and gradually whisk in 2 cups of chicken broth until smooth.
  10. Add remaining 2 cups of broth and stir until the mixture thickens into a gravy.
  11. Reduce heat and simmer for 15 minutes, stirring occasionally.
  12. Season gravy with salt and pepper to taste, then set aside.
  13. In a heavy frying pan, heat olive oil over medium-high heat.
  14. Add sliced smoked chorizo and sauté for 2 minutes until fragrant.
  15. Add deveined shrimp and cook for 1 minute, stirring frequently.
  16. Pour in 1 cup of chicken broth to deglaze the pan, scraping up any browned bits.
  17. Stir in the prepared gravy and chopped parsley.
  18. Bring the mixture to a boil and simmer for 1 minute until shrimp are cooked through.
  19. If the gravy is too thick, add the remaining 1/2 cup of broth to thin it to desired consistency.
  20. Divide the creamy grits evenly among 8 bowls.
  21. Spoon the shrimp and chorizo gravy mixture generously over the top of each serving.
