Fried Peach Pie
Description
These bite-sized fried peach pies are a delightful Southern treat, combining a tender biscuit-like dough with a sweet, spiced peach filling. The dough is made from scratch and chilled to ensure a flaky texture, while dried peaches are rehydrated and simmered to create a rich, jammy center. Fried to a perfect golden brown, these mini pies offer a satisfying crunch followed by warm, fruity sweetness. They are an excellent addition to holiday cookie platters, potlucks, or simply as an afternoon snack with coffee.Ingredients
Directions
-
In a large bowl, combine flour, 1 tablespoon sugar, baking powder, and salt.
-
Cut in shortening until the mixture resembles coarse meal.
-
In a small bowl, combine beaten egg and evaporated milk; mix well.
-
Stir the egg mixture into the flour mixture just until moistened.
-
Cover the dough and refrigerate for 24 hours.
-
Meanwhile, cut dried peaches into quarters.
-
In a saucepan, bring peaches and water to a boil.
-
Reduce heat and simmer, uncovered, for 15 minutes, stirring occasionally, until peaches are tender.
-
Stir in 1/4 cup sugar and let the filling cool slightly.
-
Remove dough from refrigerator and divide into 22 to 24 equal portions.
-
On a lightly floured surface, roll each portion into a 3-inch circle.
-
Place about 1 tablespoon of the peach mixture in the center of each pastry circle.
-
Moisten the edges of the circles with water; fold pastry in half to form a semicircle, ensuring edges are even.
-
Using a fork dipped in flour, press the edges of the pastry together firmly to seal.
-
Prick the top of each pie 2 or 3 times with a fork to allow steam to escape.
-
Heat vegetable oil to a depth of 1 inch in a heavy skillet to 375°F (191°C).
-
Carefully place pies in the hot oil, working in batches to avoid crowding.
-
Fry until golden brown on one side, then turn carefully and fry the other side until golden.
-
Remove pies from oil and drain well on paper towels.
