Garnished with raspberry coulis and fresh mint, this dessert balances sweet chocolate notes with bright fruit acidity.Ingredients
Directions
-
Prepare the chocolate cutouts by melting the reserved dark chocolate, spreading it very thin on a baking sheet, letting it set, and breaking it into long, funky pieces.
-
Divide the cold heavy cream evenly between two very cold electric mixing bowls, ensuring 2 cups in each.
-
Add 1 cup of melted white chocolate and 1 teaspoon of vanilla to one bowl, and 1 cup of melted dark chocolate and 1 teaspoon of vanilla to the other bowl.
-
Using an electric mixer, whip both bowls until the cream is firm, velvety, but still spreadable, which should take about 3 to 4 minutes.
-
Line a large loaf pan with parchment paper, allowing enough overhang to help unmold later.
-
Spoon half of the white chocolate mixture evenly into the bottom of the prepared pan.
-
Spoon half of the dark chocolate mixture over the white chocolate layer and spread it evenly.
-
Top the dark chocolate layer with the remaining white chocolate mixture, spreading gently to create layers.
-
Cover the pan completely with plastic wrap and place it in the freezer.
-
Freeze the terrine until it is well set, which takes approximately 2 hours.
-
Remove the terrine from the freezer and unmold it onto a serving platter by lifting the parchment paper overhang.
-
Wipe a knife with hot water and dry it before slicing the terrine into 2-inch thick slices to ensure clean cuts.
-
Place the remaining chocolate mixture (if any) into a pastry bag fitted with a star tip for garnish.
-
Spoon a small pool of raspberry coulis into the center of each serving plate.
-
Lay one slice of the terrine in the center of the sauce.
-
Pipe a small portion of the chocolate mixture off to the side of the terrine for decoration.
-
Garnish each plate with fresh mint sprigs, a dusting of powdered sugar, and the dark chocolate cutouts.

Note
For best texture, ensure the heavy cream is very cold before whipping. If the cream is too warm, it may not hold its shape.
You can make the chocolate cutouts ahead of time and store them in an airtight container at room temperature.
If you do not have raspberry coulis, you can substitute with strawberry sauce or a simple berry reduction made by simmering fresh berries with sugar.
To unmold cleanly, you can briefly dip the outside of the loaf pan in hot water for 10 seconds before lifting it off, but be careful not to melt the edges.
Store any leftovers in the freezer, wrapped tightly in plastic wrap and foil, for up to 1 month. Thaw slightly at room temperature for 10 minutes before serving if it becomes too hard.
