Frozen Orange Truffle Souffles
Description
These Frozen Orange Truffle Souffles are a sophisticated yet approachable dessert that balances bright citrus notes with deep chocolate richness. The light, airy orange mousse is stabilized with gelatin and whipped cream, creating a delicate texture that melts in the mouth. Each serving is built around a chocolate truffle, which is gently encased in the mousse and chilled until firm. This make-ahead dish is perfect for entertaining, as it can be prepared hours in advance.Ingredients
Directions
-
Prepare six 2/3-cup soufflé dishes by wrapping parchment paper or aluminum foil collars around the rims, extending about 1 inch above the top, and securing with tape or string.
-
In a small bowl, sprinkle the gelatin over the orange juice and let stand for 5 minutes to soften.
-
Place the bowl of gelatin in a pan of hot water and stir occasionally until the gelatin is completely dissolved, about 3 minutes. Set aside in the hot water to keep warm.
-
In a double boiler, beat the egg yolks and sugar over barely simmering water until the mixture is light-colored, creamy, and warm to the touch, about 5 minutes.
-
Remove the yolk mixture from the heat and continue beating until it cools slightly, thickens, and forms a ribbon when the beater is lifted, about 3 minutes.
-
Stir the orange zest and orange liqueur into the cooled yolk mixture.
-
In a large bowl, beat the chilled heavy cream until it doubles in volume and forms soft peaks.
-
In a separate clean bowl, beat the egg whites until they form soft peaks.
-
Stir the warm gelatin mixture into the beaten egg yolk mixture.
-
Place the bowl of yolk-gelatin mixture into a larger bowl half-filled with ice water. Stir with a rubber spatula until the mixture begins to thicken and mound, about 2 to 4 minutes.
-
Immediately remove the bowl from the ice water and gently fold in the whipped cream.
-
Fold in the beaten egg whites, about one-third at a time, until no white streaks remain. Do not overmix.
-
Spoon about 1/2 cup of the mousse mixture into each prepared soufflé dish.
-
Place one chocolate truffle in the center of the mousse in each dish.
-
Divide the remaining mousse among the dishes, covering the truffles completely. Smooth the tops with a spatula.
-
Cover the dishes loosely with waxed paper and refrigerate until set and chilled, about 2 1/2 hours.
-
Just before serving, remove the paper collars. Garnish each soufflé with a dollop of whipped cream and a strip of orange zest. Serve chilled.
