Description

This Frozen Strawberry Cream Torte is a show-stopping dessert that combines the delicate crunch of baked Swiss meringue with the luscious, airy texture of whipped cream and fresh strawberries. The meringue discs are baked slowly to achieve a perfect crispness, then layered with a mixture of heavy cream, rum, and sweetened berries for a balanced flavor profile. It is an ideal choice for special occasions, holidays, or when you need to make-ahead dessert for a gathering. The torte freezes beautifully, allowing you to prepare it days in advance. Serve it frozen for a refreshing finish that melts in your mouth, offering a sophisticated yet approachable treat for any dinner party.

Ingredients

Directions

  1. Preheat the oven to 200 degrees Fahrenheit (93&# 194;°C).
  2. Grease and flour two large baking sheets.
  3. Trace four circles, each 6 inches in diameter, in the flour on the baking sheets.
  4. Spread a thin layer of the Swiss Meringue within each traced circle to form the base layers.
  5. Sprinkle the sliced almonds over one of the meringue layers.
  6. Bake the meringue layers at 200 degrees for 30-40 minutes, or until completely crisp and dry but still white.
  7. Whip the heavy cream until stiff peaks form; you may add rum and gelatin if desired per your preferred whipped cream recipe.
  8. Drain the sweetened strawberries well to remove excess liquid.
  9. Gently fold about 2 1/3 cups of the whipped cream into the drained strawberries.
  10. Working quickly to prevent the meringue from softening, sandwich the meringue layers with the strawberry-cream mixture.
  11. Place the almond-studded meringue layer on top of the torte.
  12. Freeze the assembled torte for 2-3 hours, or until solid.
  13. Spread the remaining whipped cream around the sides of the frozen torte.
  14. Pipe a border of rosettes around the top edge using a star tube with the last of the whipped cream.
  15. Return the torte to the freezer until the exterior is frozen solid.
  16. Serve the torte frozen.
