Description

This vibrant Fruit Chili Relish offers a complex interplay of sweet, sour, and spicy flavors, making it an exceptional condiment for a variety of dishes. By combining the acidity of ripe tomatoes with the sweetness of apples and the crunch of red bell peppers, this relish provides a textural contrast that elevates simple meals. The pickling spices add a warm, aromatic depth that complements the fruitiness perfectly. Ideal for serving alongside roasted meats, grilled sandwiches, or as a zesty accompaniment to cheese boards, this vegan-friendly preserve captures the essence of home-style cooking. It is a wonderful way to preserve seasonal produce, offering a gourmet touch to weeknight dinners or holiday spreads. The balance of cider vinegar and sugar ensures a bright, appetizing profile that cuts through richness while adding a burst of flavor to every bite.

Ingredients

Directions

  1. Prepare the tomatoes by peeling and chopping them into coarse pieces.
  2. Chop the peaches or pears, leaving the skin on for texture and color.
  3. Chop the apples, leaving the skin on, and dice the onions and red bell peppers.
  4. In a large, heavy-bottomed stockpot, combine the tomatoes, fruit, onions, peppers, and salt.
  5. Bring the mixture to a boil over medium-high heat, then reduce heat to maintain a gentle simmer.
  6. Cook uncovered for 1 1/2 hours, stirring occasionally, until the mixture is reduced by half.
  7. Place the mixed pickling spices in a cheesecloth bag and tie it securely.
  8. Add the spice bag, granulated sugar, and cider vinegar to the pot.
  9. Continue to cook uncovered for 1 hour, stirring frequently to prevent sticking, until the relish is quite thick.
  10. Remove the spice bag and discard.
  11. Ladle the hot relish into clean, hot preserve jars, leaving appropriate headspace.
  12. Seal the jars according to the lid manufacturer's directions and process in a water bath canner if long-term storage is desired.
