Description

This rich chocolate fudge combines a boiled sugar and evaporated milk base with a luxurious blend of chocolate chips, margarine, and marshmallow cream. The result is a dessert that is incredibly smooth, slightly chewy, and deeply indulgent. The addition of toasted nuts provides a satisfying crunch that contrasts beautifully with the soft texture of the fudge. It is a classic treat that feels both nostalgic and elegant, making it perfect for holiday gatherings, gift-giving, or simply satisfying a serious sweet tooth. The recipe yields a substantial amount, ensuring plenty to share with friends and family or to freeze for later enjoyment.

Ingredients

Directions

  1. Combine 4 1/2 cups sugar and 1 can of evaporated milk in a heavy-bottomed saucepan.
  2. Bring the mixture to a boil over medium-high heat, stirring frequently.
  3. Boil for 7 to 8 minutes until a rolling boil is achieved, stirring often to prevent burning.
  4. While the sugar mixture boils, melt 1/2 pound of margarine.
  5. In a large mixing bowl, combine 3 packages of chocolate chips, 7 ounces of marshmallow cream, and the melted margarine.
  6. Stir the chocolate mixture until the chips are melted and the mixture is smooth and creamy.
  7. Pour the hot sugar and milk mixture over the chocolate blend.
  8. Stir vigorously until the chocolate is completely melted and combined with the hot syrup.
  9. Add 2 cups of chopped nuts and 1 teaspoon of vanilla extract to the mixture.
  10. Blend well to distribute the nuts and vanilla evenly throughout the fudge.
  11. Immediately pour the mixture into buttered pans.
  12. Chill in the refrigerator until firm enough to cut, but still soft.
  13. Cut into squares before the fudge becomes fully hard for easiest handling.

Note

This recipe yields approximately 5 pounds of fudge.

For best texture, cut the fudge while it is still slightly soft; if it becomes too hard, let it sit at room temperature for a few minutes before cutting.

Store in an airtight container at room temperature for up to two weeks, or freeze for longer storage.

You can substitute butter for margarine for a richer flavor, or use different types of nuts such as pecans, walnuts, or almonds.
