This decadent Fudge Truffle Cheesecake is the ultimate indulgent dessert for special occasions. It features a sturdy chocolate wafer crust that provides a crisp contrast to the luscious, creamy filling. The cheesecake is enriched with a homemade bittersweet chocolate ganache, adding deep cocoa notes and a silky texture. Topped with elegant white chocolate-dusted truffles, this cake balances sweetness with complex chocolate flavors. Perfect for birthdays, holidays, or when you need to impress guests, it offers a sophisticated twist on classic cheesecake. While it requires some preparation time, the result is a show-stopping dessert that feels homemade and luxurious.

Ingredients

Directions

  1. Preheat oven to 325&# 194;°F (165ðC). Position a rack in the lower third of the oven.
  2. Prepare a 10-inch springform pan by removing the sides. Line the bottom with a cardboard cake circle and cover with heavy-duty aluminum foil, leaving a 2-inch overhang. Fold the foil overhang halfway up the outside of the pan base to prevent leaks.
  3. In a small bowl, mix the chocolate wafer cookie crumbs with melted butter until well combined.
  4. Press the crust mixture evenly into the bottom of the prepared pan. Refrigerate while preparing the ganache and filling.
  5. Make the ganache: Place the finely chopped bittersweet chocolate in a medium bowl.
  6. In a small saucepan over medium heat, bring 2 cups of heavy cream to a gentle boil.
  7. Pour the hot cream over the chocolate. Let it stand for 30 seconds to allow the chocolate to melt.
  8. Whisk the mixture until smooth and glossy.
  9. Measure out 2 cups of ganache and set aside for the cheesecake filling.
  10. Measure out 1 cup of ganache, cover, and refrigerate until firm enough to pipe for truffles.
  11. Set the remaining ganache aside at room temperature for topping.
  12. Make the filling: In a small bowl, whisk the cornstarch with 1/2 cup heavy cream and vanilla extract until smooth.
  13. In a large bowl, beat the softened cream cheese and granulated sugar until creamy and smooth.
  14. Add the eggs one at a time, beating on low speed just until blended after each addition.
  15. Stir in the cornstarch mixture and the 2 cups of reserved ganache until fully incorporated.
  16. Pour the filling over the chilled crust in the springform pan.
  17. Bake for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.
  18. Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 1 hour.
  19. Remove from oven and refrigerate for at least 4 hours, or overnight, until completely set.
  20. While the cheesecake chills, pipe the chilled ganache into small truffle shapes using a piping bag or spoon. Roll in cocoa powder and dust with confectioners' sugar.
  21. Melt the white chocolate and drizzle over the truffles or use for garnish.
  22. Remove the cheesecake from the springform pan. Top with the fudge truffles and remaining room-temperature ganache if desired.
  23. Slice and serve chilled.

Note

Ensure the springform pan is tightly sealed with foil to prevent water from the bath (if used) or leaks from ruining the oven. This recipe assumes a direct bake without a water bath due to the high chocolate content, but monitor closely.

Room temperature ingredients are crucial for a smooth cheesecake filling. Take cream cheese and eggs out of the fridge at least 2 hours before baking.

The ganache can be made ahead of time. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.

For the truffles, if the ganache is too soft to pipe, refrigerate it longer. If it becomes too hard, let it sit at room temperature for 10-15 minutes.

Store leftover cheesecake in the refrigerator for up to 5 days. Cover tightly with plastic wrap.
