Description

This recipe provides the essential foundation for countless Indian dishes: perfectly cooked, soft lentils. Whether you use yellow arhar dal, red masur dal, or mung beans, this method ensures a creamy, tender texture without mushiness. The lentils are simmered with turmeric and water until soft, then whisked to create a velvety puree. This base is ideal for adding to spicy curries, mixing with vegetables, or serving as a comforting side dish. It&# 226;ÂÂs a staple technique that brings home-style authenticity to your kitchen, allowing you to build complex flavors on a reliable, hearty canvas. Simple, nutritious, and incredibly versatile.

Ingredients

Directions

  1. Pick through the lentils, peas, or beans to remove any debris and wash them thoroughly in several changes of water.
  2. Place the washed lentils, turmeric, and 4 1/2 cups of water in a deep pot.
  3. Bring the mixture to a boil over medium-high heat, being careful as lentils can foam up significantly.
  4. Stir often to prevent the lentils from lumping together or sticking to the bottom.
  5. Once boiling, reduce the heat to medium, partially cover the pot, and simmer for 40 minutes (or 25 minutes if using red lentils or mung beans).
  6. Cover the pot, reduce the heat to low, and continue cooking for an additional 20 to 25 minutes (or 10 minutes for red lentils/mung beans) until the lentils are soft.
  7. Turn off the heat and measure the volume of the cooked puree.
  8. If the volume is less than 4 1/2 cups, add enough water to bring it up to that quantity.
  9. Use a whisk to beat the lentils vigorously for 3 to 5 minutes until the mixture is velvety and smooth.

Note

This method works for yellow arhar dal, red masur dal, or yellow mung beans (moong dal). Adjust cooking times accordingly: red lentils and mung beans cook faster (total ~35-40 mins) than yellow arhar dal (total ~60-65 mins).

Cooked dal can be refrigerated for up to 3 days. Note that cooked lentils will thicken considerably and become gelatinous as they cool and sit. They also reduce in volume due to evaporation.

When reheating stored dal, it will be thick. Add a cup or two of water to the pot and simmer until you reach your desired consistency. Aim for a thick but liquid texture, not as thick as a soup where a spoon stands up, unless preferred.

Whisking by hand is recommended to "velvetize" the soup. Avoid using a food processor or blender, as this can puree the ingredients too finely and ruin the desired texture of the dal.

This is a basic base recipe. Many regional Indian recipes call for stirring these cooked lentils into a dish near the end of cooking. You can prepare this a day ahead for convenience.
