Description

These Garlic and Herb Bread Pinwheels are the ultimate crowd-pleasing appetizer or side dish. The soft, yeast-raised dough is rolled out and spread with a vibrant mixture of pureed spinach, fresh basil, parsley, thyme, and garlic. Each spiral is brushed with aromatic basil oil and topped with grated Parmesan cheese before baking to a perfect golden brown. The result is a tender, flavorful bread that balances earthy greens with rich, cheesy notes. Ideal for holiday gatherings, game days, or as a hearty addition to a simple salad dinner, these pinwheels are easy to assemble and utterly delicious warm from the oven.

Ingredients

Directions

  1. Prepare the dough using a bread machine on the 'dough' cycle or by hand, mixing flour, salt, yeast, garlic, and warm water until smooth.
  2. Turn the dough out onto a lightly floured surface and roll it into a rectangle approximately 9 x 12 inches.
  3. Brush the dough with 2 tablespoons of Basil Oil, leaving a 1-inch border clear along one of the long edges.
  4. Spread the pureed spinach evenly over the oiled surface, keeping the border clear.
  5. Sprinkle the minced basil, parsley, thyme, and freshly ground pepper over the spinach layer.
  6. Lightly moisten the clear border with water to help it seal.
  7. Starting from the edge opposite the border, tightly roll up the dough to form a log.
  8. Pinch the seam and ends together to seal the roll.
  9. Brush the entire roll with the remaining Basil Oil.
  10. Cut the roll into 14 equal slices using a very sharp knife or dental floss for a clean cut.
  11. Arrange the slices cut-side up in a baking pan sprayed with non-stick coating.
  12. Cover and let rise in a warm place for 1 to 2 hours until well risen.
  13. Preheat oven to 425°F (220°C).
  14. In a small bowl, combine the beaten egg and milk to create an egg wash.
  15. Brush the egg wash over the pinwheels.
  16. Sprinkle the grated Parmesan cheese evenly over the top.
  17. Bake for 20-25 minutes until golden brown and cooked through.
  18. Cool slightly before turning out of the pan and serving.
