Description

These Garlic Mashed Potatoes are a luxurious twist on a classic comfort food. By gently simmering whole garlic cloves in milk and butter, the harsh bite is removed, leaving behind a sweet, aromatic depth that permeates every bite. The potatoes are mashed to a velvety smooth consistency, ensuring a light and airy texture rather than a heavy or gummy result. This dish is perfect for holiday feasts, cozy weeknight dinners, or as an elegant accompaniment to roasted meats. The subtle hint of nutmeg adds warmth, while fresh parsley provides a bright finish. Simple ingredients come together to create a side dish that feels both homestyle and sophisticated.

Ingredients

Directions

  1. Peel the potatoes and cut them into quarters.
  2. Place the potato quarters in a medium-size pan, cover with cold water, and bring to a boil.
  3. Cook the potatoes for 15 to 20 minutes, or until they are tender and easily pierced with a fork.
  4. Meanwhile, separate the garlic cloves from the heads.
  5. Plunge the garlic cloves into boiling water and cook for 5 minutes.
  6. Drain the garlic and peel the skins off while still warm.
  7. Place the peeled garlic cloves in a small saucepan with half of the butter over low heat.
  8. Cook the garlic gently for 10 minutes, stirring occasionally to prevent burning.
  9. Add 1 cup of milk to the garlic and butter mixture, bring to a boil, and simmer for 2 minutes.
  10. Puree the garlic and milk mixture in a blender or food mill, or press it through a fine sieve.
  11. Drain the boiled potatoes well.
  12. Pass the potatoes through a potato ricer, food mill, or mash them thoroughly with a potato masher.
  13. Add the remaining butter one tablespoon at a time, along with the remaining 1/2 cup of warmed milk.
  14. Stir in the garlic puree, salt, nutmeg, and minced parsley to taste.
  15. Serve immediately while hot and creamy.

Note

Do not use a food processor to mash the potatoes, as this will break down the starches too much and result in a gummy texture.

You can prepare the potatoes up to the mashing stage ahead of time. Reheat in a 325F oven for 20 to 30 minutes, stirring in additional butter and milk if needed.

Be very careful not to let the garlic burn when sautéing, as burnt garlic will have a bitter taste.

For a vegan version, substitute butter with vegan margarine or olive oil and use plant-based milk.
