Gary's Beef Stroganoff recipe image

This hearty Gary’s Beef Stroganoff transforms tender beef cubes into a luxurious meal through slow braising in dry red wine and savory beef stock. The dish features earthy mushrooms, sweet caramelized onions, and aromatic fresh dill, all brought together by a rich tomato paste base. The final addition of sour cream creates a silky, velvety gravy that coats every bite. It is a comforting, protein-packed main course perfect for cold evenings or special family dinners. While it requires a couple of hours of simmering to ensure the beef is fork-tender, the process is hands-off, allowing the flavors to meld beautifully. Serve over buttered noodles or rice for a satisfying, restaurant-quality experience at home.

Ingredients

Directions

  1. Peel and chop the onions.
  2. Slice large mushrooms into thick slices, or leave small mushrooms whole.
  3. Dredge beef cubes in flour mixed with salt and pepper to give them a light coating.
  4. Heat olive oil in a large stewing pot over medium-high heat.
  5. Brown the beef cubes thoroughly in the olive oil, working in batches if necessary.
  6. Add onions, minced garlic, and mushrooms to the pot and saut lightly until softened.
  7. Pour in the red wine and enough beef stock to barely cover the ingredients.
  8. Add the broken bay leaf and fresh dill.
  9. Season with salt and pepper to taste.
  10. Stir in the tomato paste until well combined.
  11. Cover the pot and simmer gently for about 2 hours, or until the beef is very tender.
  12. Stir occasionally, scraping the bottom of the pot to prevent the flour coating from sticking and burning.
  13. If the liquid reduces too much during cooking, add additional beef stock sparingly.
  14. Just before serving, stir in the sour cream until fully incorporated and heated through.
  15. Transfer to a serving dish and garnish with sprigs of fresh dill.
  16. Serve immediately with rice or buttered noodles.
