  1. Rinse the chicken and pat dry with paper towels. Cut the chicken into bite-sized pieces.
  2. Peel and finely slice the garlic cloves. Cut the onion in half lengthwise, then slice lengthwise into 1/2-inch strips.
  3. Heat vegetable oil in a large frying pan over medium heat.
  4. Add a pinch of salt, the sliced garlic, and onion strips to the pan. Fry until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes.
  5. Add the minced lemongrass and ground chilies. Saut for 1 to 2 minutes until very fragrant.
  6. Add the chicken pieces to the pan. Cook, stirring occasionally, until the chicken is lightly browned on all sides.
  7. Stir in the fish sauce, granulated sugar, and caramel sauce. Mix well to coat the chicken.
  8. Pour in 1 cup of water. Bring to a simmer, then cover and cook for 45 minutes, or until the chicken is tender.

  10. To make the caramel sauce: Mix 1/2 cup sugar with 4 tablespoons water in a heavy saucepan.

  13. Carefully add 1/2 cup water to the hot caramel. Stir until the sugar is completely dissolved.
