Description

This hearty German-style French toast combines the comfort of baked egg-soaked bread with a delightful twist of sweet and savory toppings. Thick slices of French bread are dipped in a lemon-infused custard, coated in breadcrumbs, and baked until golden and crisp. The dish is finished with tender, poached tart apples and crispy pan-fried bratwurst. Its a robust, satisfying meal that balances textures and flavors perfectly, making it an ideal centerpiece for a lazy weekend brunch or a special family breakfast.

Ingredients

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Separate the eggs. Whisk together the milk, egg yolks, and grated lemon rind in a shallow dish.
  3. Dip each slice of French bread into the egg mixture, ensuring both sides are saturated.
  4. Whisk the egg whites in a separate bowl until frothy.
  5. Dip the soaked bread slices into the frothy egg whites, then dredge them thoroughly in bread crumbs.
  6. Arrange the coated bread slices on a greased baking sheet.
  7. Bake for 15 minutes, then remove from oven and flip the slices over.
  8. Return to the oven and bake for an additional 10 minutes until golden and crisp.
  9. While the toast bakes, slice the peeled and cored apples.
  10. Place apple slices in a small saucepan with 2 cups of water and 1 tablespoon of lemon juice.
  11. Bring the apples to a boil, then immediately remove from heat and drain.
  12. In a skillet, saut the sliced bratwurst and minced onion over medium heat until the sausage is crispy brown and onions are tender.
  13. Sprinkle the baked toast with the sugar/cinnamon mixture.
  14. Top each slice with the cooked apple slices and the sauted bratwurst and onion mixture.
  15. Serve warm with maple syrup on the side.

Note

For a vegetarian variation, omit the bratwurst and add sauted mushrooms or caramelized onions instead.

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or skillet to maintain crispness.

Use day-old French bread for best results, as it absorbs the custard without becoming too soggy.
