German Stew
Description
This classic German-style stew is a comforting centerpiece for any winter meal. Featuring tender cubes of beef slow-cooked with potatoes, carrots, and onions in a savory broth, it offers a perfect balance of heartiness and warmth. The addition of white vinegar and dill weed provides a subtle tang that brightens the rich flavors, while the flour-thickened gravy coats every bite. Ideal for family dinners or potlucks, this dish improves in flavor when made ahead.Directions
-
Heat salad oil in a large saucepan or Dutch oven over medium heat.
-
Add sliced onion and crushed garlic, and sauté until tender, about 5 minutes.
-
Remove the onion and garlic mixture from the pan with a slotted spoon and set aside.
-
Add the cubed beef to the hot oil and sauté until browned on all sides.
-
Return the reserved onion and garlic to the pot with the beef.
-
Stir in beef broth, white vinegar, sugar, salt, and bay leaf.
-
Bring the mixture to a boil, then reduce heat to low.
-
Cover and simmer for about 1 1/2 hours, or until the beef is tender.
-
Add the potatoes, carrots, and crushed dill weed to the pot.
-
Cover and continue simmering until the meat and vegetables are fork-tender, about 20 minutes.
-
Remove from heat and let cool slightly. Refrigerate overnight to allow flavors to meld and fat to solidify.
-
The next day, remove the solidified layer of fat from the top of the stew.
-
Place the stew back on the stove and simmer, stirring frequently, until heated through.
-
In a small bowl, mix flour with 1/4 cup water to form a smooth slurry.
-
Stir the flour slurry into the hot stew.
-
Cook and stir for about 2 minutes until the sauce has thickened.
-
Discard the bay leaf before serving.
