Description

This gluten-free rice bread is a staple for those seeking a wholesome, homemade alternative to store-bought loaves. Combining brown rice flour with potato starch and tapioca flour, it achieves a surprisingly soft texture and elastic rise. The addition of buttermilk and a touch of rice vinegar enhances the flavor profile, giving it a subtle tang that pairs beautifully with butter or cheese. Ideal for toast, sandwiches, or simply enjoyed warm from the oven, this bread is versatile enough for breakfast or dinner.

Directions

  1. Place the buttermilk, melted butter, rice vinegar, and salt into the bread machine pan. Stir gently with a rubber spatula to combine.
  2. In a large bowl, whisk together the brown rice flour, potato starch, tapioca flour, sugar, and xanthan gum until well blended.
  3. In a separate small bowl, beat the eggs and water lightly until just combined.
  4. Add half of the dry ingredient mixture to the bread pan. Pour in the egg and water mixture. Add the remaining dry ingredients, then sprinkle the active dry yeast on top.
  5. Select the Light Crust setting and press Start. Observe the dough during the initial kneading cycles; if it appears too dry or sticky, assist with a rubber spatula as needed.
  6. Once the baking cycle is complete, remove the bread from the pan and place it on a wire rack. Allow it to cool completely for at least 1 hour before slicing.
