This Giant Jack-O'-Lantern Cake is a show-stopping Halloween dessert that combines the warm, spiced flavors of pumpkin pie with the richness of cream cheese frosting. Made using two bundt cakes stacked and carved to look like a pumpkin, it features a moist crumb infused with pumpkin puree, walnuts, and traditional pie spices. The orange-tinted frosting mimics the skin of a pumpkin, while a green frosted banana stem adds a playful touch. Directions

  1. Preheat oven to 325°F (163°C).
  2. Grease and flour a 10-inch bundt pan.
  3. In a large bowl, whisk together the flour, sugar, pumpkin pie spice, baking soda, and baking powder.
  4. In a separate small bowl, mix the eggs, oil, and vanilla until combined.
  5. Stir the egg mixture and the pumpkin pie mix into the dry ingredients until just combined.
  6. Fold in the chopped walnuts.
  7. Pour half of the batter into the prepared bundt pan.
  8. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
  10. Repeat the process with the remaining batter to create a second identical cake.
  11. Once cooled, cut a 1/2-inch slice from the flat top (non-fluted side) of both cakes.
  12. Place one cake on a serving platter with the fluted side facing down.
  13. Spread a layer of cream cheese frosting on the flat cut side of the bottom cake.
  14. Place the second cake on top, with the fluted side facing up.
  15. Insert a foil-covered cardboard disk into the central hole of the top cake to create a flat surface.
  16. Place a 1/3 piece of unpeeled banana on the cardboard disk.
  17. Tint a small portion of the remaining frosting green and frost the banana stem.
  18. Tint the rest of the frosting orange and frost the entire cake exterior.
  19. Use a piping bag or knife to add a jack-o'-lantern face design with frosting.
