Description

This homemade Ginger Peach Jam is a delightful spread that captures the essence of summer in every jar. The sweet, juicy peaches are perfectly balanced by the warm, spicy notes of crystallized ginger, creating a complex flavor profile that is both refreshing and comforting. The texture is smooth yet substantial, thanks to the use of fruit pectin which ensures a clean set without being overly gelatinous. This versatile jam is excellent on toasted bread, biscuits, or as a glaze for grilled meats and cheeses. It makes a thoughtful gift for friends and family, offering a taste of home-style cooking that is easy to prepare with simple ingredients. Whether enjoyed fresh from the jar or stored for later, this preserve brings a burst of color and flavor to your breakfast table.

Ingredients

Directions

  1. Peel and pit fully ripe peaches, then finely chop or grind them to measure 4 1/2 cups.
  2. Measure the chopped peaches into a 6- to 8-quart saucepot and add the finely chopped crystallized ginger.
  3. Measure the sugar and set aside.
  4. Mix the fruit pectin into the fruit and ginger mixture in the saucepot.
  5. Place the pot over high heat and stir the mixture until it comes to a full boil.
  6. Immediately add all the sugar and stir continuously.
  7. Bring the mixture to a full rolling boil and boil for exactly 1 minute, stirring constantly.
  8. Remove the pot from the heat and skim off any foam with a metal spoon.
  9. Ladle the hot jam quickly into hot jars, filling within 1/8 inch of the tops.
  10. Wipe the jar rims and threads clean with a damp cloth.
  11. Cover the jars with two-piece lids and screw the bands on tightly.
  12. Invert the jars for 5 minutes, then turn them upright to cool.
  13. After 1 hour, check the seals to ensure they have set properly.

Ensure peaches are fully ripe for the best flavor and natural pectin content.

The crystallized ginger adds a distinct spicy sweetness; adjust the amount based on your preference for heat.

Jars should be sterilized before use. Hot jars help prevent thermal shock when filling with hot jam.
