Ingredients

Directions

  1. Finely mince the venison, pork belly, and chicken livers, then combine them in a large bowl.
  2. Add orange and lemon zest, crushed garlic, fresh thyme, olive oil, red wine vinegar, powdered bay leaves, and black pepper.
  3. Mix the ingredients thoroughly and stir in the red wine.
  4. Cover the bowl and refrigerate the mixture to marinate overnight.
  5. Remove from refrigerator and season with salt, frying a small test piece to check seasoning if needed.
  6. Pack the mixture tightly into a 2 1/4 pint terrine mold, hollowing out the center slightly.
  7. Cover with greaseproof paper and foil, then place in a roasting pan with hot water halfway up the sides.
  8. Bake at 325&# 194;°F (160ðC) for 2 1/4 to 2 1/2 hours.
  9. Remove from oven and use a baster to reserve the surrounding juices.
  10. Press the pate down with a weight and let it cool for 1 1/2 hours.
  11. Drain any remaining juices that have not been absorbed.
  12. Mix the reserved juices with orange juice and add water if needed to reach desired volume.
  13. Dissolve gelatin in the warm juice mixture and brush over the chilled pate to glaze.
  14. Refrigerate until set, then garnish with kumquats before serving.

Note

Ensure meats are finely minced for a smooth texture; a food processor can help achieve consistency.

Marinating overnight enhances flavor penetration; do not skip this step for best results.

Use a terrine mold lined with parchment paper for easy unmolding.

The glaze sets best when the pate is fully chilled; allow at least 4 hours for setting.

Store leftovers in an airtight container in the refrigerator for up to 5 days.

Substitute duck livers for chicken livers for a richer flavor profile.

Adjust salt carefully, as pork belly can add significant sodium.

Serve with crusty bread, cornichons, and a glass of red wine.
