Gobhi Mung
Description
Gobhi Mung is a wholesome and satisfying vegetarian stew that combines the earthy richness of yellow split mung beans with the delicate sweetness of cauliflower and potatoes. Slow-cooked until the beans are tender and the vegetables are soft, this dish achieves a comforting, slightly thickened consistency. Aromatic spices like cumin, turmeric, and fresh ginger provide a warm, savory depth, while a finishing tempering of hot ghee and green chilies adds a vibrant, fragrant kick. It is a perfect weeknight meal that is both nourishing and easy to prepare, best served hot over a bed of steamed basmati rice or with warm roti bread.Ingredients
Directions
-
Rinse the yellow split mung beans thoroughly under cold water until the water runs clear.
-
In a deep pot, combine the washed mung beans, chopped onions, grated ginger, minced garlic, turmeric, and 3 cups of water.
-
Bring the mixture to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes.
-
Add the quartered potatoes, cauliflower florets, salt, and an additional 2 cups of water to the pot.
-
Cover and continue to cook for another 15 minutes, or until the beans and vegetables are tender and the liquid has reduced slightly.
-
While the stew simmers, heat the ghee in a small skillet over high heat.
-
When the ghee is very hot, add the cumin seeds and fry until they turn dark brown and fragrant.
-
Quickly add the seeded green chilies and red pepper powder, stirring briefly for just 10-15 seconds to release aromas without burning.
-
Immediately pour the hot ghee mixture (tadka) over the stew in the pot.
-
Stir in the lemon juice and chopped coriander leaves gently to combine.
-
Serve hot with plain cooked rice.
