  2. In a large bowl, combine the chopped apples, lemon peel, walnuts, brown sugar, raisins, flour, and cinnamon. Mix well to coat the fruit evenly.
  3. On a lightly floured surface, roll out the pie pastry to a thickness of about 1/8 inch.
  4. Using a round cutter or glass, cut the pastry into 5-inch circles. You should have enough for 10-12 bundles.
  5. Spoon about 1/4 cup of the apple mixture into the center of each pastry circle.
  6. Moisten the edges of the pastry circles with water using a pastry brush or your finger.
