Directions

  1. Preheat oven to 350°F (175°C).
  2. Grease two 9-inch springform pans with butter.
  3. In a large bowl, combine flour and 1 1/2 cups sugar.
  4. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  5. Reserve 2 cups of the crumb mixture for the topping.
  6. To the remaining crumb mixture in the bowl, add the first two beaten eggs, sour cream, salt, baking powder, baking soda, and almond extract.
  7. Mix until well combined and smooth.
  8. Spread the batter evenly over the bottom and up the sides of the prepared springform pans.
  9. In a separate bowl, combine softened cream cheese, vanilla, remaining 2 beaten eggs, and 1/3 cup sugar.
  10. Beat until smooth and creamy.
  11. Spread half of the cream cheese mixture evenly over the batter in each pan.
  12. Spread the raspberry preserves on top of the cream cheese layer in each pan.
  13. Place raw almonds in a food processor and pulse until chunky.
  14. Combine the chopped almonds with the reserved 2 cups of crumb mixture.
  15. Sprinkle the almond-streusel topping evenly over the preserves on each cake.
  16. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  17. Cool the cakes in the pans on a wire rack for at least 30 minutes before removing the sides.
