Description

This hearty dish features tender roasted goose paired with a rich, slow-cooked cabbage mixture. The goose is seasoned simply with salt and pepper, allowing its natural flavor to shine, while the cabbage is braised in rendered goose fat with onions and grated apple for a perfect balance of savory and sweet. The texture of the cabbage becomes soft and melded, absorbing the aromatic flavors of the meat. This recipe is ideal for holiday gatherings or special weekend dinners where comfort food is desired. It brings a rustic, home-style elegance to the table, making it a satisfying centerpiece that pairs well with simple sides or crusty bread.

Ingredients

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Have the goose cut up into serving pieces. Season all pieces with 2 teaspoons of salt and 1/4 teaspoon of pepper.
  3. Place the seasoned goose pieces on a rack set inside a roasting pan.
  4. Roast in the preheated oven for 2 hours, or until the meat is almost tender.
  5. Remove goose from oven and transfer to a platter. Tent with foil to keep warm.
  6. Carefully measure 6 tablespoons of the rendered fat from the bottom of the roasting pan.
  7. Pour the fat into a heavy casserole dish or Dutch oven and place over medium-low heat.
  8. Add the sliced onions and shredded cabbage to the hot fat.
  9. Cook the cabbage and onions, stirring occasionally, for 1 hour until tender and flavors have melded.
  10. Stir in the grated apple and remaining salt and pepper to taste. Cook for an additional 5 minutes.
  11. Serve the roasted goose alongside the warm cabbage mixture.
