The addition of dried oregano, basil, and a bay leaf enhances the herbal warmth, while a splash of dry white wine adds complexity. Ingredients

Directions

  1. Combine the tomato puree, whole plum tomatoes (crushed by hand), tomato paste, chopped onion, crushed garlic, mushrooms, oregano, basil, garlic powder, red pepper, sugar, and bay leaf in a large covered pot.
  2. Stir in the dry white wine and season with salt and pepper to taste.
  3. Bring the mixture to a simmer over medium-low heat, then reduce heat to low.
  4. Simmer the sauce covered for approximately three hours, stirring occasionally, until it reaches your desired thickness.
  5. If the sauce becomes too thick, thin it with a little water. If it is too thin, uncover the pot and simmer over very low heat for an additional 30 to 45 minutes to reduce further.
  6. Remove the bay leaf before serving.
