Description

This elegant Gratin of Potatoes and Porcini Mushrooms is the perfect centerpiece for a sophisticated dinner party or a cozy weekend meal. The deep, umami-rich flavor of dried porcini mushrooms infuses the creamy sauce, creating a luxurious taste experience that pairs beautifully with roasted meats or hearty stews. Thinly sliced potatoes bake until tender and golden, absorbing the savory liquid for a melt-in-your-mouth texture. While traditionally rich, this dish can be adapted with dairy-free alternatives for a vegan version. The combination of earthy mushrooms and comforting potatoes makes this gratin a timeless classic that feels both rustic and refined. It is an excellent way to elevate simple ingredients into a gourmet experience, offering warmth and depth that guests will love. Serve hot for the best texture and flavor.

Ingredients

Directions

  1. Soak the dried porcini mushrooms in hot water for 1 to 1.5 hours.
  2. Strain the mushrooms through paper towels; reserve the liquid.
  3. Rinse the porcini mushrooms gently and squeeze them dry.
  4. Discard any hard stems and cut the mushrooms into strips.
  5. Preheat the oven to 325F (165C).
  6. Generously butter a 2-quart gratin dish.
  7. Mince the shallots.
  8. Slice the peeled potatoes thinly.
  9. Heat olive oil in a heavy large saucepan over medium heat.
  10. Add the shallots and saut until tender, about 2 minutes.
  11. Add the porcini strips and saut for 1 minute.
  12. Add the reserved porcini liquid, 2/3 cup cream, milk, salt, and pepper, and bring to a simmer.
  13. Add the potato slices, stirring gently to separate them.
  14. Cook until the potatoes begin to soften, stirring occasionally, about 15 minutes.
  15. Taste and adjust seasoning if needed.
  16. Transfer the mixture to the prepared gratin dish.
  17. Spoon the remaining 3 tablespoons of cream over the top of the potatoes.
  18. Bake until the potatoes are tender, about 1 hour.
  19. Preheat the broiler.
  20. Broil the gratin until the top is browned, about 3 minutes.

Note

Make Ahead: This gratin can be prepared up to 1 day in advance. Cover and refrigerate before baking. Allow extra time for baking if cooking from cold.

Substitutions: For a vegan version, substitute the whipping cream and milk with unsweetened plant-based cream and milk (such as coconut or soy). Use butter-flavored oil instead of butter for the dish.

Potato Choice: Waxy potatoes hold their shape better, while starchy potatoes (like Idaho/Russet) become creamier. Adjust cooking time slightly based on the potato type.
