Description

These Greek Biscuits are a delightful fusion of fluffy, flaky dough and robust Mediterranean flavors. By using a convenient package of refrigerated buttermilk biscuits as the base, you can create a gourmet appetizer or side dish in under 20 minutes. The filling combines salty, crumbled feta cheese, briny pimento-stuffed green olives, fresh zesty dill, and sharp scallions, all brightened with a squeeze of lemon juice. The result is a savory pastry that is golden brown on the outside and moist, cheesy, and herbaceous on the inside. Perfect for serving alongside soups, stews, or as a festive addition to a mezze spread, these biscuits bring a burst of Greek-inspired taste to any table without requiring complex baking skills.

Ingredients

Directions

  1. Preheat the oven to 400&# 194;°F (200ðC).
  2. In a small bowl, combine the crumbled feta cheese, chopped fresh dill, chopped scallions, chopped green olives, and lemon juice. Mix well and set aside.
  3. Spray ten 2-inch diameter muffin pan cups with nonstick cooking spray.
  4. Open the package of biscuits and gently separate each biscuit into two thin, round layers of dough.
  5. Place one layer of dough into the bottom of each sprayed muffin cup, reserving the second layers for topping.
  6. Divide the cheese mixture evenly among the muffin cups, placing about 1/10th of the mixture onto each bottom biscuit layer.
  7. Top each filled cup with the remaining biscuit layer. Press the edges of the top and bottom layers together gently to seal the filling inside.
  8. Pour a small amount of water into any empty muffin cups to prevent the pan from overheating or warping.
  9. Bake until the biscuits are puffed and golden brown, approximately 8 to 10 minutes.
  10. Remove the pan from the oven and carefully pour out any water from the empty cups.
  11. Allow the biscuits to cool in the pan for 1-2 minutes, then transfer them to a wire rack to cool slightly before serving.
