Description

These Green Tomato Pickles are a vibrant, tangy condiment perfect for adding zest to sandwiches, charcuterie boards, or summer salads. Made with firm green tomatoes and onions, they are cured overnight in salt to draw out moisture and intensify flavor. The pickling brine balances sweet brown sugar and sharp vinegar, while a bouquet of whole spices including cloves, allspice, and mustard seeds adds warmth and complexity. The result is a crunchy, flavorful pickle that holds up beautifully in storage.

Directions

  1. Thinly slice the green tomatoes and onions.
  2. Place slices in a large non-reactive container, sprinkle with 1/2 cup salt, and let stand overnight to draw out moisture.
  3. Drain the tomatoes and onions, then rinse thoroughly with cold water. Soak in fresh cold water for 1 hour to remove excess salt.
  4. Drain the vegetables again and set aside.
  5. Combine whole black peppercorns, cloves, allspice, crushed celery seeds, mustard seeds, and ground mustard in a cheesecloth square. Tie securely to create a spice bag.
  6. Slice the lemon into thin rounds. Finely chop 2 red pepper pods.
  7. In a large pot, combine the vinegar, brown sugar, spice bag, lemon slices, and chopped red peppers (reserving 1 whole pod for garnish).
  8. Bring the mixture to a boil, stirring until the sugar dissolves completely.
  9. Add the drained tomatoes and onions to the pot.
  10. Simmer for 30 minutes, stirring gently occasionally to prevent sticking.
  11. Remove and discard the spice bag.
  12. Pack hot pickles into sterilized jars, leaving 1/2-inch headspace.
  13. Garnish each jar with slender strips of the reserved red pepper, placing them vertically against the side of the jar.
  14. Wipe jar rims, adjust lids, and process in a boiling water bath for 15 minutes.
  15. Remove jars and let cool completely before storing.
