Green Tomato & Apple Chutney #2
Description
This vibrant Green Tomato and Apple Chutney offers a delightful balance of sweet, sour, and spicy flavors. Made with tart green apples, sultanas, and dates, it provides a rich, complex taste that complements Indian curries, cheese boards, and roasted meats beautifully. The slow simmering process melds the ingredients into a thick, glossy sauce with a wonderful texture. Ideal for preserving the bounty of late summer tomatoes, this chutney improves with age, making it a fantastic homemade gift or pantry staple.Ingredients
Directions
-
Thinly slice the green tomatoes to yield approximately 6 cups.
-
Place the sliced tomatoes in a large shallow dish and sprinkle with salt.
-
Cover the dish with plastic wrap and refrigerate overnight to draw out excess moisture.
-
Drain the tomatoes thoroughly the next day, discarding the released liquid.
-
Transfer the drained tomatoes to a large, heavy-bottomed saucepan.
-
Add the chopped onions, peeled and chopped apples, malt vinegar, brown sugar, raisins, chopped dates, and ground ginger to the saucepan.
-
Place the pickling spices in a piece of cheesecloth and tie it securely to form a spice bag.
-
Add the spice bag to the saucepan with the tomato mixture.
-
Stir all ingredients together until well combined.
-
Bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking.
-
Once boiling, reduce the heat to low to maintain a gentle simmer.
-
Simmer the chutney for about 1.5 to 2 hours, stirring occasionally, until it thickens to your desired consistency.
-
Remove and discard the cheesecloth spice bag.
-
Ladle the hot chutney into sterilized half-pint jars, leaving 1/2-inch headspace at the top.
-
Wipe the rims of the jars clean with a damp cloth.
-
Seal the jars with lids and bands, then process in a boiling water bath for 10 minutes to ensure proper preservation.
