Directions
-
Preheat your oven to 350&# 194;°F (175ðC).
-
Cut the tops off the green peppers and remove the seeds and white membranes from the inside to create hollow shells.
-
Steam the hollowed pepper shells over boiling salted water for about 5 minutes until they are slightly tender but still hold their shape. Drain well and set aside.
-
In a large mixing bowl, combine the pork and beans, sliced smoked sausage, dried minced onion, brown sugar, ketchup, and mustard. Mix thoroughly until the ingredients are well blended.
-
Spoon the bean and sausage mixture into the steamed pepper shells, packing them down gently to fill them completely.
-
Place the filled peppers upright in an ovenproof casserole dish or baking pan.
-
Bake in the preheated oven for 20 minutes, or until the peppers are tender and the filling is heated through.
-
If desired, sprinkle the shredded cheddar cheese over the tops of the peppers during the last 2-3 minutes of baking to allow it to melt.
-
Remove from the oven and serve immediately while hot.
