  1. In a large bowl, combine flour, butter, 1 egg, and salt. Work with your fingers until the mixture resembles coarse crumbs.
  2. Add enough cold water, one tablespoon at a time, to bring the dough together into a soft ball.
  3. Wrap the dough in waxed paper or plastic wrap and chill in the refrigerator for 2 hours.
  4. While the crust chills, prepare the filling by combining crumbled feta, cream cheese, 2 eggs, minced watercress, nutmeg, black pepper, and sugar in a mixing bowl.
  5. Mix the filling ingredients thoroughly until well blended.
