Description

This bold Grilled Chicken Sauce is a complex blend of sweet, smoky, and spicy flavors that elevates any barbecue. Featuring a rich tomato base balanced by brown sugar and cider vinegar, it gets its depth from Wrights liquid smoke and a splash of bourbon. The heat comes from a custom spice blend including dried chipotles, ancho chilies, and ground habanero, creating a warm kick that lingers without overwhelming the palate. It is designed as a finishing sauce rather than a marinade, meant to be brushed onto chicken or pork during the final minutes of grilling.

Directions

  1. In a spice grinder or mortar and pestle, combine white peppercorns, black peppercorns, coriander seeds, cumin seeds, fennel seeds, dried chipotles, ancho chili, chilpetin pods, and garlic clove.
  2. Grind the spice mixture until it reaches a medium-fine, somewhat grainy consistency.
  3. Transfer the ground spice mixture to a small bowl and stir in the ground habanero and Hungarian paprika until well combined.
  4. In a medium saucepan over medium-high heat, warm the orange-habanero-chipotle oil.
  5. Add the chopped onion to the hot oil and sauté until translucent, about 3-4 minutes.
  6. Reduce heat to medium and add the finely chopped garlic, cooking for another minute until fragrant.
  7. Pour in the tomato sauce and stir well to incorporate with the onions and garlic.
  8. Add the brown sugar, cider vinegar, liquid smoke, honey, and bourbon to the saucepan.
  9. Stir continuously until the sugar dissolves and the mixture is smooth.
  10. Add the prepared spice blend to the sauce one teaspoon at a time, stirring after each addition.
  11. Simmer the sauce gently for 5 minutes, stirring occasionally to prevent sticking.
  12. Remove the saucepan from heat and stir in the lemon or lime juice.
  13. Let the sauce steep for at least 30 minutes to allow the flavors to meld.
  14. Brush onto grilled chicken or meat during the last 15 minutes of cooking.
