Description

These Grilled Chicken Appetizer Roll-Ups are the perfect party starter, combining tender, lime-kissed chicken with melty cheese and fresh green onions wrapped in warm flour tortillas. The marinade infuses the meat with bright citrus and garlic notes, while the simple assembly makes them easy to prepare ahead of time. Served with a rich, creamy cheese dip or your favorite salsa, these roll-ups offer a delightful balance of savory, tangy, and creamy flavors. They are ideal for potlucks, game day gatherings, or as a light yet satisfying appetizer before a main meal. The portable nature of the roll-ups makes them finger-food friendly, ensuring your guests can enjoy them without fuss.

Ingredients

Directions

  1. Cut chicken breasts in half lengthwise to create thin strips.
  2. Season chicken strips with salt and pepper.
  3. In a small bowl, combine olive oil, lime juice, and minced garlic.
  4. Marinate chicken strips in the lime mixture for at least 30 minutes.
  5. Preheat grill or barbecue to medium heat.
  6. Remove chicken from marinade and grill for 10 to 12 minutes, turning once, until cooked through. Alternatively, saut in a nonstick skillet for 10 to 12 minutes.
  7. While chicken cooks, divide the softened cheese food in half.
  8. Warm the flour tortillas slightly to make them pliable.
  9. Spread 1 tablespoon of the reserved cheese food on the lower third of each tortilla.
  10. Lay one cooked chicken strip across the cheese.
  11. Sprinkle with a little chopped green onion.
  12. Fold in the sides of the tortilla and roll up tightly.
  13. Wrap each roll-up individually in aluminum foil.
  14. To serve, warm the foil-wrapped roll-ups on the grill for 8 to 10 minutes, or in an oven preheated to 350F (177C) for 8 to 10 minutes.
  15. Meanwhile, combine the remaining half of the softened cheese food with the sour cream to create a dipping sauce. Stir until smooth.
  16. Remove roll-ups from foil and cut each in half diagonally.
  17. Serve warm roll-ups with the cheese dip or salsa.

Note

Make Ahead: You can assemble the roll-ups and wrap them in foil up to 24 hours in advance. Keep refrigerated until ready to warm.

Substitutions: If you cannot find Port wine cheese food, use sharp cheddar cheese food or a mild cheddar cheese spread. You can also use cream cheese instead of the cheese food for the dip, though the texture will be slightly different.

Cooking Method: These can be made entirely on the stovetop if you do not have access to a grill. Saut the chicken in a skillet and warm the wrapped roll-ups in the oven.

Serving Suggestions: These are great with a side of salsa verde or pico de gallo for a fresher flavor profile.

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 30-60 seconds or in the oven until warm.
