  1. Preheat your grill to medium-high heat.
  2. Wash the Japanese eggplants and trim off the stems, leaving the skin intact.
  3. Cut the eggplants in half lengthwise.
  4. Brush both sides of the eggplant halves lightly with half of the olive oil.
  5. season the eggplant halves with a pinch of salt and pepper.
  6. Place the eggplants cut-side down on the grill grate.
  7. Grill for 5 to 7 minutes until the cut side is charred and tender.
  8. Flip the eggplants and grill for another 2 to 3 minutes until the skin is blistered and the flesh is soft.
  9. While the eggplants grill, mince the garlic clove and mix it with the remaining olive oil.
  10. Remove the eggplants from the grill and immediately brush the garlic-oil mixture over the hot flesh.
