Description

This show-stopping Grilled Lobster Dinner brings the vibrant flavors of the Mediterranean coast directly to your backyard grill. The star of the show is the live lobster, butterflied and grilled until the meat is firm, sweet, and succulent. It is basted repeatedly with a fragrant herb butter infused with smashed garlic, fresh oregano, and a whisper of cayenne pepper for gentle, aromatic heat. Accompanying the shellfish are ears of corn grilled in their husks, which steam inside before charring on the outside to create a smoky, tender sweetness that perfectly cuts through the richness of the seafood. This dish is ideal for warm-weather entertaining or a special weekend dinner when you want to impress guests without spending hours in the kitchen. The combination of charred corn, spicy butter, and tender lobster creates a satisfying, luxurious meal that feels approachable and delicious. Serve with plenty of lemon wedges to brighten the flavors.

Ingredients

Directions

  1. Preheat your grill to medium-high heat. If using charcoal, arrange coals for both direct and indirect heat zones.
  2. Fill a large bowl halfway with cool water and submerge the ears of corn with their husks intact. Let them soak for 20 minutes to prevent burning and steam the corn.
  3. While the corn soaks, prepare the herb butter by melting butter in a small saucepan over low heat. Add the smashed garlic cloves.
  4. Stir in fresh oregano, cayenne pepper, and salt. Cover and set aside to allow the flavors to infuse.
  5. Prepare the lobster by using the blunt edge of a knife or a mallet to gently crack the lobster claws and knuckles in two spots on one side. Be careful not to crush the meat inside to prevent curling during grilling.
  6. Brush the shell of the lobster body and the uncracked side of the claws and knuckles with olive oil to prevent sticking to the grill grates.
  7. Place the lobster pieces on a platter, cracked side up, and brush generously with some of the reserved herb butter.
  8. Drain the ears of corn and place them directly on the center of the grill grate. Cover and grill for 5 minutes to begin cooking.
  9. After 5 minutes, add the lobster pieces to the grill, cracked side up. Cover and grill, basting occasionally with the herb butter, for about 15 minutes.
  10. Meanwhile, brush the ears of corn thoroughly with fresh water and rotate them slightly to char the husks evenly, adding a smoky flavor.
  11. Check the lobster for doneness by pulling up the tail meat; it should be firm and opaque white, not translucent. The underside should be dark orange. Do not overcook.
  12. Transfer the lobster and corn to a large serving platter.
  13. Peel and discard the husks and silks from the corn. Brush the corn generously with the remaining herb butter.
  14. Brush the lobster tails with more herb butter. Garnish with lemon wedges and serve immediately, passing the remaining butter for dipping.
