Description

These Grilled Sausage Tapas offer a delightful balance of savory, sweet, and tangy flavors. Fully cooked smoked sausages are marinated in a zesty lemon-pepper and garlic dressing, then threaded onto skewers with juicy pineapple chunks, crisp apple wedges, and tender summer vegetables. The marinade caramelizes slightly on the grill, creating a glossy, flavorful crust. Ideal for summer gatherings, backyard BBQs, or as a hearty appetizer, these skewers are easy to assemble and crowd-pleasing. They pair beautifully with crusty bread or a light salad.

Ingredients

Directions

  1. Cut the smoked sausage into 1-1/2 inch pieces.
  2. Drain pineapple chunks, cut apple into wedges, slice squash or zucchini into wedges, parboil and cut onions into 1-inch pieces, halve tomatoes, prepare whole mushrooms, and cut bell peppers into 1-1/2 inch squares.
  3. Whisk together olive oil, red wine vinegar, lemon juice, lemon rind, minced garlic, sugar, thyme, pepper, and salt in a large bowl to create the marinade.
  4. Add sausage pieces to the marinade, toss until well coated, cover, and refrigerate for at least 1 hour, turning occasionally.
  5. Preheat grill to medium-high heat.
  6. Thread marinated sausage pieces alternately with pineapple, apple, zucchini, onions, tomatoes, mushrooms, and bell peppers onto skewers.
  7. Place skewers on the grill and brush generously with remaining marinade.
  8. Grill for 5 to 6 minutes, turning occasionally, until vegetables are tender-crisp and sausage is heated through and lightly charred.
  9. Brush with any remaining marinade during the last minute of grilling.
  10. Serve immediately while hot.

Note

Use metal skewers or soak wooden skewers in water for 30 minutes before threading to prevent burning.

You can substitute Bratwurst, Thuringer, or Summer Sausage for the smoked sausage.

Feel free to swap vegetables based on seasonal availability; bell peppers, onions, and mushrooms work well year-round.

Ensure the sausage is fully cooked before serving; the grilling step is primarily for heating and flavoring.

Leftover marinade that has not touched raw meat can be boiled for 2 minutes before brushing on grilled items for safety.
