Description

This Gujarati-style cabbage dish is a staple of Indian vegetarian cooking, celebrated for its bright flavors and satisfying crunch. The recipe combines shredded cabbage and grated carrots, tempered with mustard seeds, dried red chiles, and a hint of asafetida for depth. Fresh green chiles add a gentle heat, while lemon juice and a touch of sugar balance the spices with a sweet-tart finish. It is light, healthy, and incredibly quick to prepare, making it an ideal side dish for any meal. Serve it alongside dal and rice or as part of a thali for a complete, flavorful experience that highlights the natural sweetness of the vegetables.

Ingredients

Directions

  1. Core the cabbage and cut it into fine, long shreds.
  2. Peel the carrots and grate them coarsely.
  3. Cut the green chile into thin, long strips, discarding stems and seeds.
  4. Heat the vegetable oil in a wide, heavy-bottomed pan or casserole over medium-high heat.
  5. Add ground asafetida to the hot oil, followed immediately by whole black mustard seeds.
  6. As soon as the mustard seeds begin to pop, add the whole dried red chile.
  7. Stir once briefly until the dried chile turns dark red.
  8. Add the shredded cabbage, grated carrots, and green chile strips to the pan.
  9. Reduce heat to medium and stir-fry for about 30 seconds to coat the vegetables.
  10. Season with salt, sugar, and chopped fresh cilantro.
  11. Cook for another 5 minutes, stirring occasionally, until the vegetables are just tender but still retain some crispness.
  12. Remove the whole red chile and discard it.
  13. Squeeze lemon juice over the vegetables and stir well to combine.
  14. Serve immediately as a side dish.
