Description

This robust Hangover Soup is a traditional German comfort food designed to soothe the soul and replenish energy after a long night. The dish combines savory Polish sausage and crispy bacon with tangy rinsed sauerkraut, creating a rich, complex flavor profile that is both acidic and savory. Fresh vegetables like onions, celery, green peppers, and tomatoes add texture and brightness, while caraway seeds and paprika provide warm, aromatic notes. The broth is thickened with a smooth sour cream and flour mixture, resulting in a creamy, hearty consistency that feels like a warm hug in a bowl. It is the perfect remedy for cold winter days or those mornings when you need something gentle yet substantial. Simple to prepare with pantry staples, this soup delivers deep satisfaction and is best served hot with crusty bread.

Ingredients

Directions

  1. In a large Dutch oven or heavy pot, cook the sliced Polish sausage and bacon over medium heat until the sausage is browned and the bacon is crisp.
  2. Remove the sausage and bacon from the pot with a slotted spoon and set aside on a plate. Reserve the drippings in the pot.
  3. Crumble the cooked bacon into small pieces and set aside with the sausage.
  4. Add the chopped onion and green pepper to the reserved drippings in the pot. Cook until tender but not browned, stirring occasionally.
  5. If there is excess fat, drain it off, leaving about 1 tablespoon in the pot.
  6. Return the cooked sausage and crumbled bacon to the pot. Add the beef broth, rinsed sauerkraut, sliced mushrooms, sliced celery, chopped tomatoes, paprika, and caraway seeds.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45 minutes to allow the flavors to meld.
  8. While the soup simmers, combine the sour cream and flour in a small bowl. Whisk until smooth and free of lumps.
  9. Gradually stir about 1 cup of the hot soup into the sour cream mixture to temper it, preventing curdling.
  10. Stir the tempered sour cream mixture back into the Dutch oven.
  11. Cook and stir the soup over medium heat until it thickens and becomes bubbly.
  12. Continue to cook and stir for 1 more minute to ensure the flour is cooked through. Serve hot.

Note

Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently over low heat, adding a splash of broth if the soup has thickened too much during storage.

Substitutions: You can substitute kielbasa for the Polish sausage if preferred. For a vegetarian version, omit the sausage and bacon, use vegetable broth, and add extra mushrooms and white beans for substance.

Tips: Rinsing the sauerkraut is crucial to reduce excessive saltiness and bitterness. If you prefer a spicier kick, add a dash of hot sauce or red pepper flakes.
