Description

These healthy waffles are a nutritious twist on a breakfast classic, combining whole wheat flour, oat bran, and cornmeal for a hearty texture. The batter is leavened with yeast for a light, airy rise, while dark molasses adds a subtle depth of flavor and rich color. Perfect for those seeking a vegan, high-fiber option that doesn't sacrifice taste. They pair beautifully with fresh berries, a drizzle of maple syrup, or a dollop of nut butter. Ideal for weekend brunches or quick weekday mornings, these waffles freeze well for easy reheating. Ingredients

Directions

  1. In a large bowl, combine 1 packet rapid-rise yeast, 1 tablespoon sugar, 3 tablespoons oat bran, 2 tablespoons nonfat dry milk powder, 1/2 cup cornmeal, 3/4 cup whole wheat flour, 1/4 teaspoon baking soda, and 3 tablespoons wheat germ.
  2. In a separate container, heat 3/4 cup skim milk until very warm (125-130 degrees F), then mix in 2 egg whites and 1/4 cup dark molasses.
  3. Pour the warm liquid mixture into the dry ingredients and stir until just combined; do not overmix.
  4. Let the batter rest for about 20 minutes at room temperature, or refrigerate overnight for a deeper flavor.
  5. Preheat your waffle iron according to manufacturer's instructions.
  6. Pour an appropriate amount of batter onto the center of the hot waffle iron and close the lid.
  7. Cook until the waffles are golden brown and crisp, approximately 4-6 minutes, depending on your iron.
  8. Serve immediately with your favorite toppings.

Note

Note: This recipe includes egg whites and nonfat dry milk powder, which are not vegan ingredients, despite the tag. For a fully vegan version, substitute the egg whites with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water per egg white) and use a plant-based milk powder or simply increase the liquid milk slightly.

Storage: These waffles freeze well. Allow them to cool completely, then place in a single layer on a baking sheet to freeze solid before transferring to a freezer bag. Reheat directly from frozen in a toaster or oven.

Tip: Ensure the milk is warm (125-130&# 194;°F) but not hot to activate the yeast without killing it. If the batter seems too thick after resting, you can add a splash of additional warm milk.
