Hearty Hungarian Peasant Soup
Description
This traditional Hungarian soup is the definition of comfort food. It features a rich, aromatic broth created by simmering skinned chicken and beef stew meat with a medley of root vegetables like carrots, parsley root, and kohlrabi. The addition of nutmeg, dill, and black pepper gives it a distinctively warm and savory flavor profile. Perfect for chilly evenings, this hearty meal requires minimal effort but rewards you with deep, satisfying flavors. Serve the tender meat and vegetables alongside crusty bread, or ladle the broth over soup noodles for a complete, nourishing dinner that feels like a warm hug in a bowl.Ingredients
Directions
-
Place the skinned frying chicken and 1 lb of boneless beef stew meat into a large stockpot.
-
Add 16-20 black peppercorns, 1 whole nutmeg, 1 beef bouillon cube, and 1 1/2 teaspoons of salt to the pot.
-
Cover the meat and spices with 3 quarts of water and bring the mixture to a rolling boil over high heat.
-
Reduce the heat to low, cover the pot, and let the meat simmer gently for 1 hour to develop the broth flavor.
-
While the broth simmers, clean and cut 2 parsley roots (with greens), 6 carrots, 1 leek, 1 onion (with skin), 3 cloves garlic, 1 kohlrabi, 2 stalks celery, 1 tomato, and 1 green pepper into large, even chunks.
-
After one hour, add the chopped vegetables and 3 sprigs of fresh dill to the pot.
-
Continue to simmer gently for another hour, or until the meat is tender and the vegetables are cooked through.
-
Meanwhile, cook 12 oz of soup noodles according to package instructions, then drain well.
-
Spoon the cooked noodles into soup bowls and ladle the hot broth and vegetables over them.
-
Serve the tender meat and remaining vegetables on the side with crusty black bread for a hearty entree.
