Herbed Meat Loaf With Sun-Dried Tomato Gravy
Description
This Herbed Meat Loaf is a comforting upgrade to the classic dinner staple, featuring extra-lean ground beef bound with milk-soaked breadcrumbs and fresh thyme. The meat is studded with rehydrated sun-dried tomatoes and roasted peppers, adding bursts of savory sweetness. It is baked until golden and served smothered in a velvety gravy made from the reserved tomato soaking liquid, beef broth, and a touch of cornstarch. The combination of aromatic herbs and rich tomato flavors creates a dish that is both hearty and elegant.Directions
-
Combine sun-dried tomatoes and boiling water in a heatproof bowl. Cover and let stand for 15 minutes to rehydrate.
-
Drain the tomatoes, reserving the soaking liquid for the gravy. Dice the rehydrated tomatoes and set aside.
-
Heat olive oil in a wok or skillet over medium-high heat. Stir-fry green onions and chopped peppers for 4 minutes until softened.
-
Add roasted garlic to the skillet and cook for 1 more minute. Remove from heat and set aside to cool slightly.
-
In a large mixing bowl, combine bread crumbs and milk. Let sit for 2 minutes until the crumbs are moistened.
-
Add the ground beef, beaten egg, diced sun-dried tomatoes, sautéed vegetable mixture, shredded provolone, basil, oregano, thyme, black pepper, and beef bouillon granules to the bowl.
-
Gently mix all ingredients together with your hands until just combined. Do not overmix, as this can make the meatloaf tough.
-
Shape the mixture into a loaf on a baking sheet lined with parchment paper or in a loaf pan.
-
Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the internal temperature reaches 160°F (71°C).
-
While the meatloaf bakes, prepare the gravy. In a small saucepan, combine the reserved tomato soaking liquid and beef broth.
-
Dissolve cornstarch in a tablespoon of cold water and stir into the broth mixture. Bring to a simmer, stirring constantly, until the gravy thickens.
-
Let the meatloaf rest for 5 minutes before slicing. Serve slices topped with the warm sun-dried tomato gravy.
