Description

This Herbed Turkey Roast transforms a simple boned turkey breast into an elegant, tender main course perfect for dinner parties or special family meals. The breast is generously seasoned with fresh parsley and thyme, then layered with salty prosciutto and creamy fontina cheese before being rolled and tied. Slow-cooked in a rich mixture of chicken broth and dry white wine, the meat becomes incredibly juicy and flavorful. As the turkey cooks, the cooking liquid is transformed into a luxurious, thickened sauce infused with the herbs and meat juices.

Directions

  1. Rinse the turkey breast and pat it completely dry with paper towels. Place it skin-side down on a cutting board.
  2. Sprinkle the meat side evenly with chopped parsley, minced thyme, salt, and pepper.
  3. Layer the fontina cheese slices and prosciutto slices over the turkey, overlapping them to cover the surface.
  4. Starting from one of the long edges, firmly roll up the turkey into a tight cylinder, jelly roll style.
  5. Place 3-4 sprigs of fresh thyme or parsley along the length of the roll.
  6. Tie the roll securely with kitchen string at 2-inch intervals to maintain its shape during cooking.
  7. Place the tied turkey roll in the slow cooker, seam-side down.
  8. Pour the chicken broth and dry white wine around the turkey in the slow cooker.
  9. Cover and cook on LOW for 9 to 10 hours, or until the meat is very tender when pierced with a fork.
  10. Carefully lift the turkey roll out of the slow cooker and place it on a warm platter. Cover loosely with foil to keep warm.
  11. Skim and discard any fat from the cooking liquid remaining in the slow cooker.
  12. In a small bowl, whisk together the cornstarch and cold water until smooth.
  13. Stir the cornstarch mixture into the cooking liquid in the slow cooker.
  14. Increase the slow cooker setting to HIGH. Cover and cook, stirring every 10-15 minutes, until the sauce has thickened, about 15-20 minutes.
  15. Remove and discard the string and herb sprigs from the turkey. Slice the turkey roll into 1/4-inch thick slices.
  16. Garnish with additional fresh thyme sprigs if desired and serve immediately with the thickened sauce.
